A life-long learner, Eric is an evolving ramen chef trained under legendary Keizo Shimamoto of Ramen Shack, (formerly in NYC) now in LA. Eric’s love for noodles began at an early age as he spent the majority of his early childhood in Seoul, Korea. If you couldn’t find him at his grandma’s house eating her homemade noodles, he was in street stalls of traditional markets crushing a bowl. His love for noodles soon led him to begin cooking his own at home. What began as a hobby became a growing passion. After several years of cooking ramen at home, Eric decided to quit his full-time job as a financial consultant and pursue his dream. After the completion of his training with Keizo Shimamoto at Ramen Shack and Koitani San of Jiraigen at RAJUKU, Eric began his pop-up ramen shop at Junction Deli in Maryland which quickly grew a loyal base of ramen heads from the DMV area.
