Maxwells Trading is the brainchild of Underscore Hospitality partners Josh Tilden and Erling Wu-Bower. Josh and Erling opened Maxwells so that they would have their ideal place to unwind, eat, drink and listen to music with their family and friends. Our name pays homage to Erling’s oldest son Maxwell and to the trade of goods and ideas taking place between our store, our guests and our co-conspirators.
Our mission is to deliver casual and attentive service, soul satisfying food, crisp cocktails, engaging wines and great music while nurturing the wellbeing of our community, our planet and our future.
We cook the food we want to eat and the food we want to cook. Our cuisine is an expression of our chef team’s heritage and experience. It’s Chicago food, from children of the city.
Maxwells Trading is part of a larger collective of food, design and sustainability obsessed businesses that occupy 1516 W Carroll Avenue in the Kinzie Industrial Corridor. 1516 W Carroll’s additional collaborators are The Roof Crop Farm and Foundation, Third Season – an apothecary and design store, and Flashpoint Innovation – a food and beverage consultancy. All tenants of 1516 W Carroll are firmly invested in The Roof Crops mission of mitigating climate change through productive green space in city settings.
